I wish to establish a LLC in Wyoming and would like the member to be my Australian company.

Yes, absolutely, a Wyoming LLC can be owned by any legal person, including foreign companies. As far as EIN goes you will be able to obtain the EIN for the Wyoming LLC by applying for it with your Australian company or yourself personally as the representative.
